Grain
1 glass grain
2 1/2 mugs water
Squash
1 little butternut squash, stripped and cut into vast lumps
1 tsp cinnamon
squeeze of nutmeg
1 tbsp olive oil
salt and pepper
Apple juice vinaigrette
3 tbsp apple juice vinegar
1/2 tbsp maple syrup
6 tbsp olive oil
salt and pepper
Remaining fixings
4 mugs arugula
1/2 glass dried cranberries
4 eggs, poached
2 oz shaved Parmesan
Guidelines
Preheat broiler to 350 degrees F.
Join grain and water in a medium pot. Heat to the point of boiling over high warmth. Lessen to a stew, spread and cook until delicate and the water is retained, around 45 minutes.
Hurl cut butternut squash with cinnamon, nutmeg, olive oil, and salt and pepper. Spread on a preparing sheet and dish for 30 minutes or until delicate.
Plan vinaigrette by whisking together vinegar with maple syrup and olive oil. Season with salt and pepper.
Hurl together grain with simmered squash, arugula, and dried arugula with vinaigrette. Gap onto 4 plates. Top with poached egg and shaved parmesan. Serve.
