Fruit Cake / Christmas Gift 125 gr. Unsalted Butter (room temperature) 150 gr. Brown Sugar 2 Eggs (weighs 60 - 62 gr. each with shell) 80 gr. Marmalade (warm it up in the microwave) 1 tsp. Rum Essence 170 gr. Plain Flour / All Purpose Flour 1/2 tsp. Salt 50 gr. Finely Ground Almond 250 gr. Dried Fruits Preheated Oven: 160°C Baking temperature: 160°C Baking Time: 80 minutes Baking time may vary depending on the type and accuracy of your oven. After 40 - 45 minutes, cover the cake pan with aluminium foil to prevent the top of the cake getting too brown. Continue baking till it is done. Like I always said EVERY OVEN IS DIFFERENT. No matter what cake you are baking, if you are not certain you can insert a tooth pick in the cake and when it comes out clean that means your cake is cooked. Please keep in mind sometimes your cake may bake faster or longer due to the accuracy of your oven. So make sure you know your oven well and adjust it accordingly.
